老枞水仙茶树，一般达到70--80年以上，制作出来的成品茶枞味非常明显，茶汤厚实。老枞水仙味是特有的一种类似青苔的韵味，其特征较为明显。树龄较短的属于新枞水仙茶叶（通常把三十年以下的水仙茶树称新枞水仙）。“枞味”表现为树龄越老的水仙茶树，制作出来的成品茶老枞特征越为明显。老枞水仙茶叶的品质综合描述为： “厚，滑，甘，醇”。具体表现为成品茶冲泡后，浓稠，醇滑，回甘，喉韵明显, 回味持久.
